Five Essential Summer Salads

For me, summer is salad. I love the luxury of being able to walk outside and gather bunches of greens and fruits and vegetables for dinner. There are endless delicious and healthy options. Fresh, beautiful, summer salads come together in snap. 

Growing the food that you eat, and the flowers you surround yourself with, is one of the healthiest and most satisfying things you can do for your body and your soul.

The older I get, the more I crave summer. Carefree and crazy. The garden overflowing with fruits and vegetables. Flowers everywhere. The frenzied days. Insects buzzing around. The heat. Perhaps that because I’m in Vermont and know how short but sweet this season is. I miss it almost as soon as it begins.
