Maple Brûléed Harbison
This is one of those subtly luxurious indulgences that feels distinctly Vermont. A wheel of Harbison, gently warmed, topped with maple sugar, and brûléed until crackled and glassy on top. It is simple, dramatic, and deeply comforting.
Harbison is a soft-ripened cheese wrapped in spruce bark, which lends a woodsy aroma and subtle depth. When warmed, the interior becomes spoonable and lush. A thin layer of maple sugar caramelized over the surface adds sweetness and a delicate crunch that contrasts beautifully with the creamy center.
I love serving this in the colder months, especially during sugaring season. It feels celebratory without requiring much effort, and it anchors a winter cheese board with warmth and intention.

Recipe Notes
Harbison is at its best when just slightly warmed. The goal is not to melt it, but to soften the interior slightly so it becomes spoonable. Depending on the age of the Harbison, the interior can vary from a thick paste to a runnier, already spoonable consistency. Heating will vary based on the age. The maple sugar should be applied in an even, thin layer so it caramelizes properly without burning.

Ingredients For Maple Brûléed Harbison
- Harbison Cheese (1 wheel, about 8 oz)
- Maple Sugar (2 tablespoons)
- Freshly Ground Black Pepper (optional)
- Crackers Or Sliced Baguette (for serving)
How To Make Maple Brûléed Harbison
- Remove The Top Rind Of The Harbison: With a sharp knife, carefully cut the top rind off the Harbison. Place the knife just above one side of the spruce bark and carefully slice off the outer white rind layer to expose the creamy interior. The rind is about 1/4 inch thick. (The brûléed top will cover any minor cutting imperfections.)
- Warm The Cheese: Preheat the oven to 350°F. Place the wheel of Harbison on a small oven-safe dish. Warm for 4 to 10 minutes until just softened. *See Recipe Notes for details on warming.
- Add The Maple Sugar: Remove from the oven and sprinkle the maple sugar evenly over the surface.
- Brûlée The Top: Using a kitchen torch, carefully caramelize the maple sugar until deeply golden and crackled.
- Finish And Serve: Let sit for 2 minutes to set. Add a few cracks of black pepper if desired and serve immediately with crackers or sliced baguette.

Tips & Tricks
- Do NOT overheat the cheese. You want it soft, not collapsed. A riper Harbison may need almost no heating at all. Judge by the consistency when you remove the top. Already gooey, warm slightly and watch closely. Still pasty, warm a little longer, and also watch closely.
- Apply maple sugar evenly for consistent caramelization. A second layer of maple sugar can be added and torched for an even thicker caramelized sugar layer.
- If you do not have a torch, place briefly under a broiler and watch very carefully.
Substitutions
Cheese Alternative Any soft-ripened cheese such as Brie or Camembert can be used if Harbison is unavailable.
Sugar Alternative If you do not have Maple Sugar, white sugar can be substituted to turn this into a classic Brûléed Harbison.

Make Ahead
The cheese can be warmed just before guests arrive. Brûlée immediately before serving for the best crackled top.
Storage
Best enjoyed immediately. Leftovers can be refrigerated and gently rewarmed.
FAQs:
Maple sugar works best because it caramelizes properly. Syrup will melt into the cheese rather than form a crackled top.
A torch gives the best results. A broiler can work, but watch carefully to prevent burning.
Neutral crackers or thin slices of baguette work beautifully. Fresh apples also pair well.
