Lobster rolls are such a simple but decadent treat. Simple ingredients, simple to prepare, decadently delicious! Fresh, richly sweet lobster pairs with a creamy dressing scented with fresh herbs and lemon. Pile it on a warm, garlic herb Cloverleaf Roll and that’s when the magic happens. These warm, buttery and bright lobster rolls are low carb, keto friendly, and packed with B vitamins.

The Inspiration…
Have you ever had a lobster roll? If you have, then you know that you don’t need much more inspiration than the memory of that… so delicious.
I went to college in Maine. I can remember one of the first nights at school, being greeted with a lobster bake for the whole freshman class. So very decadent. I loved lobster before that, but being in Maine made it all the more essential. Each summer I try and take a trip back to explore the rugged seacoast, hike the beautiful forests, jump in the freezing ocean, and eat lobster and blueberries with abandon.
Lobster rolls have become, for me, an essential part of summer. However, being on the keto diet, those brioche, split-top rolls are not an option. Enter, these Cloverleaf Rolls. Have you ever had the rolls at Red Lobster (I say blushing)? These are like those, except they are low carb and keto-friendly and made from natural, healthy ingredients.
What better pairing than a lobster roll made with these warm, garlic, buttery rolls?

The Ingredients…
For a lobster roll, simple is better. Lobster has such a stand alone flavor that it doesn’t need much to make it shine. Here I mixed fresh cooked lobster meat with a dressing of mayonnaise, celery, fresh parsley, fresh chives, and lemon. Simple fresh and clean.
I piled this atop fresh, warm Keto Cloverleaf Rolls. These rolls were a happy discovery. While I was looking through Carolyn Ketchum’s cookbook, The Ultimate Guide To Keto Baking, for a shortbread recipe, I saw this recipe for Cloverleaf Rolls. I thought they could be the perfect pairing for lobster. Garlicky, buttery, and made with cheddar cheese.

The Steps…
The first step is to make the Keto Cloverleaf Rolls. These are pretty quick and simple to make. They do call for a couple of ingredients which you might not have on hand but are commonly used in keto baking. Please see the recipe for details. To see my keto baking essentials click here.
Next, prepare the lobster. Place the cooked lobster meat in large bowl. In a separate bowl, mix together the mayonnaise, lemon juice, minced lemon rind, celery, and herbs. Season with salt and pepper to taste. Add the dressing to the lobster meat and toss to coat.
To assemble the rolls, pull the Cloverleaf Rolls open slightly. To do this, pull the three sides to separate the top slightly, leaving the bottom intact. Pile the lobster into the hole and on top of the roll. Garnish with chopped chives and salt and pepper if you wish.

The Results…
Finally, a recipe for keto lobster rolls! These warm, buttery and bright lobster rolls are low carb, keto friendly, and packed with B vitamins. While they are a perfect salute to summer, they would be equally welcome on the side of a warm bowl of soup or as a “slider” at parties.

Ingredients
- 1 lb. Fresh Cooked Lobster Meat
- 1/3 cup Mayonnaise
- 1/4 cup Finely Chopped Celery
- 1 Tsp Fresh Parsley
- 2 Tsp Fresh Chives
- 2 Tsp Fresh Lemon Juice
- 1/2 Tsp Minced Lemon Rind
- Salt & Pepper
- Keto Cloverleaf Rolls, Warm
Instructions
- Place the cooked lobster meat in large bowl.
- In a separate bowl, mix together the mayonnaise, lemon juice, minced lemon rind, celery, and herbs.
- Season with salt and pepper to taste.
- Add the dressing to the lobster meat and toss to coat.
- Pull the Cloverleaf Rolls open slightly by pulling the three sides to separate the top, but leaving the bottom intact.
- Pile the lobster in the opening on top.
- Garnish with minced chives.
