Almond flour is the flour that I use most for keto baking. It is one of the most versatile. It is made from simply grinding almonds, so it is very nutritious.

The key is to get an almond flour which is very finely ground. This is made by blanching the almonds first to remove the skins and then grinding them. The result is a light colored, fine ground flour which does not impart any flavor - perfect as the backdrop for most baked goods.

Using alternative flours is essential to keto cooking and baking and almond flour is by far my favorite for most keto baking recipes. It results in delicious, nutritious foods without imparting any taste. Coconut flour on the other hand definitely adds a distinct flavor, so is best used in recipes that pair well with that.

This almond flour from Bob's Red Mill is very finely ground making it an excellent choice to use in place of wheat flour. Some of the almond flours on the market are courser ground or meals, which do not translate as well.

I use this sugar replacement in virtually everything that calls for white sugar. There are some instances where other replacements may act better, ice cream and frozen recipes for example. But for a go-to everyday white sugar this wins for me.
