Rhubarb Bee’s Knees Cocktail

This Rhubarb Bee’s Knees cocktail puts a sweet, tart, and low carb spin on this traditional drink. A Bee’s Knees Cocktail is a mix of gin, lemon, and honey. I gave this a little twist by making a Rhubarb Gin to use to add an interesting flavor, beautiful color, and to replace the honey to keep this low carb and keto-friendly. And wow is that Rhubarb Gin good!

After weeks and week of waiting, my Rhubarb Gin was finally ready to drink. Just in time for Bee’s Knees Week. If you aren’t familiar with it, Bee’s Knees Week was started by Caledonia Spirits, the makers of the renowned Barr Hill Gin and Vodka. This distillery, located here in Vermont, uses raw honey to distill it’s spirits. As bees play such a vital role in their process, Caledonia Spirits launched Bee’s Knees Week, to help save the bees and spread awareness of their important role in our food and drink system.

How does Bee’s Knees Week work? During Bee’s Knees Week, Barr Hill will be planting 10 square feet of bee habitat for every Bee’s Knees cocktail shared on social. How amazing is that?

The Inspiration

For this cocktail, I chose to create an infused Rhubarb Gin which includes a granular sugar replacement to replace the honey syrup which is traditionally used in this drink but which I can’t have on keto. And wow, is it delicious! It needs almost nothing else.

Making this version of a Bee’s Knees Cocktail could not be easier… once you’ve waited for your Rhubarb Gin to infuse. First, fill a cocktail shaker with ice. Add 3 oz. of gin and 1 oz. of freshly squeezed lemon juice. Shake well and strain into a coupé glass rimmed with muddled raw sugar (or a raw sugar replacement) and bee pollen. Garnish with a rhubarb swirl.

I do believe that raw honey is an incredibly nutritious and beneficial thing. To bring in some of that honey flavor and to give another nod to the bees, I rimmed the glass with bee pollen (also incredibly good for you).

How To Make: Rhubarb Bee’s Knees Cocktail

1 Ounce Fresh Lemon Juice
Bee Pollen For Rim
Raw Sugar Alternative For Rim

Directions

Prepare the bee pollen sugar rim.
Place some golden raw sugar alternative and bee pollen on a plate. Muddle with a muddler or back of a spoon to combine. Moisten the rim of your glass with the lemon. I used a coupé glass. Press the rim of the glass onto the pollen and sugar mixture to coat.

Fill a cocktail shaker with ice.

Add the cocktail ingredients to the shaker, and shake well.
Add 3 oz. Rhubarb Gin and 1 oz. Freshly Squeezed Lemon Juice. Shake well.

Serve and Garnish
Strain into the prepared cocktail glass. Optionally, garnish with a shaved rhubarb stalk.
