Peach, Avocado & Feta Cheese Salad With Thyme Vinaigrette

This Peach, Avocado, and Feta Cheese Salad with Thyme Vinaigrette is a real head turner. It is an unforgettable and essential summer salad.   • 3 cups Of Lettuce (Mesclun Mix, Boston, Butter, etc.)
  • 1 Peach, Sliced
  • 1/2 cup Of Cucumber, Sliced
  • 2 Scallions, Diced
  • 1/2 cup Of Feta Cheese
  • 3 Tbsp Of Extra Virgin Olive Oil
  • 2 Tbsp Of Fresh Lime Juice
  • 2 Tsp Of Dijon Mustard
  • 1 Clove Of Garlic
  • 1 Tbsp Of Fresh Thyme
  • A Splash Of Balsamic Vinegar
  • Salt & Pepper To Taste


  1. First, wash and prep your veggies. Add the lettuce, sliced cucumber, and diced scallions to a large salad bowl.
  2. Slice the peach, avocado, and feta cheese – keep these in larger slices or chunks so you get pops of flavor. Add to bowl.
  3. Mix the extra virgin olive oil, fresh lime juice, dijon mustard, minced fresh thyme, and minced garlic clove in a container until well mixed. Add a splash of balsamic vinegar (to taste) to take the edge off of the tartness of the lime.
  4. Pour the vinaigrette over the salad ingredients in the bowl and toss to coat everything well with the dressing.
  5. Finally, season with salt, and pepper and toss well to combine. Taste to see if it meets your sweet-tart preferences – you might want to add a squeeze of lime or drizzle of balsamic on top.
  6. Serve!
